Tomato & Cucumber Spa Day Salad!

Of course you don’t need to be in a robe eating this salad straight after a massage appointment because that’s not always realistic. However, it’s always the dream! At least for me anyway, Diamonds. 😉 Let me set the scene though incase you have the same dreams as I tend to! It’s a gorgeous sunny summer morning, you’re hosting a spa day with your girlfriends outside on the patio. All of you are in your big long white comfy as heck robes, you set up a mani-pedi station, and a facial station stashed with all of your favorite face masks and skin care products to smooth, brighten, and hydrate the body while you have the best time with the girls! I mean doesn’t that sound like such a fun and exciting way to spend a July day?! Not only is the pampering important, but so is the menu! Good nutrition and fueling your body in the best way possible is another crucial factor when it comes to taking extreme care of your overall health.

This spa salad has got every section of health covered!

What’s in the salad and what does it do for your body?

  • Tomatoes- very rich in antioxidants and provide the body with vitamin C and potassium. This piece of produce is shown to reduce the risk of heart disease and certain cancers.
  • Cucumbers- There are countless benefits the body receives from ingesting cucumbers which is why they’re one of the best spa foods to ever exist! They deliver a ton of hydration into our systems which help with dehydration, and are great for hair, skin, and nails. They’re filled with antioxidants which help reduce the risk of chronic diseases. The cucumber peel caused a decrease in blood sugar levels which helped those who suffer from diabetes. Their nutrients are known to fight high blood pressure as well.
  • Sugar snap peas- They contain lots of vitamin K which help produce red blood cells, along with vitamin C which help heals wounds and improves immunity.
  • Avocado- Provides the body with necessary healthy fats which can improve heart health. They can also improve eye health, supply you with vitamin E, vitamin K , and vitamin B. This fruit is said to combat metabolic syndrome and help with types of arthritis.
  • Marinated mozzarella balls- Surprisingly cheese is a nutrient dense food when eaten in the right portions as well as eating the right kind of cheese! Mozzarella cheese has been known to help reduce the risk of osteoporosis and heart disease being that it helps lower cholesterol levels.

What is this salad dressed with?!

  • A good pour of your favorite extra virgin olive oil.
  • Two tablespoons of your favorite Italian dressing.
  • The juice from 1/4 of a lemon.
  • A handful of grated parmesan cheese.
  • A squeeze of honey.
  • Season with sea salt, freshly cracked black pepper, garlic powder, onion powder, parsley, oregano, and thyme.

As I said before, you definitely don’t need to be having a spa day to enjoy this nutritious and delicious salad! You can serve yourself a big bowl of this with some grilled chicken chopped up for protein and sit outside underneath the sunlight. It’s a self care salad and it’s always a perfect time no matter what you’re doing to indulge in some self care. This would also be a succulent side dish for bridal or baby showers, anniversary parties, and of course cookouts of all kinds while you celebrate the rest of the summer.
