



Now, I know what you’re thinking Diamonds. Thanksgiving is over! That was last month and you are now in December and have entered into full on Christmas mode. I get it, trust me. I feel the exact same way. We’ve decked the halls, trimmed our trees, brought out our winter coats, and are picking out our favorite Christmas mugs every single morning to fill with gingerbread flavored coffee. Most of us, with me included have even started their holiday shopping, along with wrapping. Gift giving has to be the one thing I look forward to most when this time rolls around each year. However, I still wanted to share this recipe because you don’t just have to make this after Thanksgiving. You can absolutely do this the day after Christmas, a holiday party you hosted, or even New Years with whatever you have leftover from the meals you’ve enjoyed.
How I built these savory sandwiches:

- I used sourdough bread. However, that’s only because I’ve been on a sourdough bread kick and I love it. I use it for avocado toast, all sorts of sandwiches, and to toast up in the morning so I can dip into my sunny side up eggs. If I wanted to choose a more perfect bread for the occasion I would use a thick slice of brioche or even Texas toast would work great too. It really is all personal preference, but when you’re stuffing a sandwich with all of the good stuff having a thicker slices of bread is crucial.
- I layered on homemade turkey gravy.
- Then I laid on slices of Danish cow’s milk cheese.
- On goes the turkey. As many slices as you would like!
- This year for Thanksgiving I made a mashed potato casserole so I scooped a spoonful of that on after the turkey.
- Of course, you can not have a Thanksgiving leftover panini without stuffing.
- To hold everything together I smeared ‘on cranberry sauce and a bit of apple butter that extra punch of fall goodness.


You Diamonds know me! I always have to have a garnish and serve some yummy snacks as sides, so I served these perfectly succulent paninis with salty kettle cooked chips, dill pickles, and cranberry sauce to spread onto each bite. The combination of sweet and savory is something I’ve always been into, and is growing on me even more as I get older. I love it more than any other combination so anytime I get to pair one of my creations with a jam, preserve, jelly, or compote, I do it!
