Creamy Cilantro Lime White Chicken Chili

You can’t have fall without having chili cooking in your kitchen for hours and having the smell permeate throughout every square inch of your home.

As traditional chili does hold a nostalgic place inside my heart, there’s nothing quite like the creaminess and tanginess of a white chicken chili filled with hearty vegetables, and bright, bold flavors to warm your soul this Thanksgiving season. Speaking of Thanksgiving; if turkey is already on your mind this month, you can definitely swap out the ground chicken for ground turkey in this recipe. You can also do shredded chicken if you prefer that, or of course, shredded turkey. The choice is yours. I am here to walk you through my passions in life by showing you all of my creations and everything great in this culinary world that I come across as each day passes. The recipe: It’s a one pot wonder and we can all appreciate that, especially this time of year!

  • In a large soup pot add two pads of butter and two tablespoons of good olive oil.
  • Let that sizzle before adding in one whole onion, two bell peppers (preferably red, yellow or orange) two stalks of celery, green onion for that sharp flavor, and one small carrot for some natural sweetness. (All chopped at a small dice)
  • Season with sea salt, white pepper, lemon pepper, onion powder, garlic powder, paprika, chili powder, cumin, chopped cilantro and parsley, Worcestershire sauce, a squeeze of honey, and the juice from half of a lime.
  • Let the vegetables sauté for 10 minutes on medium-high heat until the caramelization process begins.
  • Add in one pound of ground chicken and let that brown with the vegetables for another 5 minutes.
  • Add 4 oz. of cream cheese and a 1/2 cup of sour cream.
  • Deglaze with 1/3 cup of white wine.
  • An entire bag of 90 second white rice. (No, you do not have to microwave it before mixing it into our chili).
  • Stir in one can of great northern beans (strained) along with one can of yellow corn (strained)
  • Finish the ingredients off by pouring in 1/2 cup of chicken stock in and let this chicken chili simmer for at least an hour before serving with your favorite toppings.

The toppings and accompaniments:

  • Fresh lime wedges
  • Shredded iceberg lettuce
  • Sour cream garnished with cilantro
  • Shredded Mexican cheese
  • Chopped vine ripe tomatoes
  • Chopped and seasoned avocados
  • Restaurant style tortilla chips

You can of course add anything else onto your chili that would fit the bill!

Three easy and exquisite ways to serve this up:

  • 1.) Chili over chips- Pile some tortilla chips inside of your best ever chili bowl. Ladle the chicken chili over the chips and garnish with all of the toppings until your heart is content. You can also put the chips on top of the chili if that’s your vibe. (This is the dish pictured above)
  • 2.) Nachos chili grande- Unlike the first way we served this, you’re going to put the cheese under the chili so that the cheese melts and gets gooey and delicious since that’s the way nachos are meant to be enjoyed! Then, once the meat is added you are welcome to garnish to your liking.
  • 3.) A chicken chili salad- This might sound odd, however, it is the same exact concept as a taco salad, except instead of the taco meat, it’s chili! Chicken chili.

Occasions to serve this chili at:

  • Football parties.
  • Holiday parties or events.
  • Game nights.
  • Guy get togethers! Perfect for throwing together if your boyfriend or husband are having their friends over for cards and drinks.
  • Thanksgiving Eve- instead of going out host a pre holiday party at your place! This is a great way to ensure that the food and drinks are divine, and that your friends have a safe place to stay.
  • A typical weeknight meal to break up the week with beautiful feast!
