CALLING ALL EGG SALAD LOVERS TO COME READ THIS POST!
As I do cherish an egg salad sandwich on toasted white bread, topped with American cheese, lettuce and tomato, there is nothing quite like a big bowl filled with freshly made creamy egg salad next to all of the accompaniments to dip, pile and scoop as you wish. You might look at this board and think “party food” since that would be an exquisite item to welcome your guests with so that everyone can hover around the counter while concocting the perfect combinations with each of the foods circled in all directions on the board. However, this is a perfect Thursday night meal to break up the week by having something fun and delicious to share with the ones you love.
Spreads like these are a great conversation starter!

The day I create a cookbook is the day that you will see SO many more boards like this. Boards you never thought you’d see in your life! Foods you never thought would mesh well with others, but when paired together to stack on top of one another on a baguette, a crisp, a cracker, or a chip will prove otherwise. Boards of any kind with food from all over the world, different ethnicities, different colors, different textures, different flavors is my strong suit. It’s my passion; my love language. Seeing a board like this that you probably have never seen or even thought of before, is proof of that.

The items that make up this excellent egg salad board:
- The perfect egg salad- Mine is simple, no onion, no celery. I just love a creamy seasoned egg salad, but you can use whatever egg salad recipe is your favorite.
- Sliced chicken from a rotisserie chicken.
- Fresh vegetables- vine ripened tomatoes, yellow, red, and orange bell pepper slices, chopped radishes, and carrot chips. The carrot chips are my favorite since it makes for easy dipping access!
- Iceberg lettuce cups.
- Red grapes.
- Dill pickle chips.
- Toasted sourdough bread slices.
- Grilled Kielbasa. You can sear it if the weather doesn’t permit.
- Crispy tater tots.
- Blue cheese dressing- I love dipping potatoes in blue cheese, but if you prefer to use ketchup, honey mustard, barbecue sauce, etc, be my guest.
- Avocado seasoned with salt and lemon pepper.
- Tortilla chips– We have that crispy lettuce to pair with the salad. However, we need that crunchy chip action to take place as well.
What you can do with the items on this excellent egg salad board:
- The lettuce cups can be made into a wrap with the chicken, egg salad and a few crunchy vegetables to top it all off. Some blue cheese as a garnish would really send this little wrap over the edge.
- The toasted sourdough bread can be made into an opened face egg salad sandwich with or without the chicken. Some avocado, egg salad, and crunchy dill pickles would make the best one!
- The kielbasa can be used as a vessel to dip into the egg salad, OR you can even add it on top of the open faced sandwich underneath the pickle!
- The vegetables, tortilla chips, and tater tots can also be used to as vessels to scoop up the egg salad as well!
- The grapes are to munch on since I just can’t help having a touch of sweetness added into my creations. Sweet & savory is my favorite combination as I’ve mentioned before.
