


It’s everyone’s favorite pasta salad without the pasta!
The most colorful dense bean salad recipe you’ll ever come across:
Our Winter that we’ve been experiencing the past few months has been nothing short of freezing. There’s been constant storms, snow when we’re not even expecting it, sleet, and temperatures below years past. It is the coldest winter I can remember that we’ve had to endure in the longest time. Therefore, I am craving spring and summer eats, so I’m sure all of you are as well. This is the perfect dish to put together when you’re feel that hint of seasonal depression, or a bit lack luster from the constant white, grey scenery outside when you really want to be sitting on the porch in the sun; eating lunch the site of a rainbow. This is what everyone needs and it isn’t just a dish, it can be served as anything or put on everything! You can dip pita or tortilla chips in it. You can load it up in a charred tortilla, inside of a warmed wrap, in a crispy cold lettuce cup, or eaten as is. Since it’s THAT delicious. There are so many flavors, textures, and nutrients in this dense bean salad you won’t feel like you’ll need any type of sides, unless it’s a potato of some sort. That reminds me! You can even pile this salad into a loaded baked potato! That would be such an eating experience!


What you’ll need to build this salad:
- Cubed pit ham.
- Cubed salami.
- Cubed pepperoni.
- Cubed Colby jack cheese.
- Defrosted frozen sweet corn
- Defrosted frozen green peas.
- Chopped roma tomatoes.
- Chopped multi colored bell peppers.
- Chopped Persian cucumbers.
- Chopped green onions.
- Chopped green olives or olives of your choice. I can’t have a salad like this without that briny bite it so desperately needs.
- Sliced sugar snap peas.
- A can of garbanzo beans (drained)
- Mozzarella cheese.
- Shredded parmesan cheese. I love the different textures of all of the cheeses and the shredded up parmesan is quite necessary!
- Dress with olive oil, lemon juice, apple cider vinegar, a touch of sour cream and dijon mustard.
- Season with sea salt, lemon pepper, garlic powder, oregano, basil, and parsley.

Mix until your heart is content and adjust the seasonings and dressing to your liking.
