


A savory and sassy way to kick off the spring season!
As you Diamonds can tell from my last post, I’m on a full blown Mediterranean kick! If you get obsessed with certain foods or hyper-fixate on specific cuisines for a certain period of time, then this board is definitely for you. Even if this style of eating isn’t for you, you can easily switch out the ingredients and enjoy it in the same concept of a “build your own board”! Italian style would be a perfect way to go by serving pieces of grilled pizza dough, pepperoni rings, ground sausage, fresh mozzarella cheese, olives, mushrooms, onions, jalapeños, sweet peppers, and pineapple for some sweetness. Yum! That may be a post I’ll have to throw at you Diamonds very soon. Hehe. I want you all to remember that anything I show you could become an idea uniquely of your own by changing just a few things. My creativity can open yours up immensely and honestly, that’s the goal! Food is for fun and enjoyment! It never has to be as serious as you may think it does.
Now that I’ve open your mind to opportunity, let’s get to building this Greek inspired pita board!


- Start off any pita building board with really good quality pitas. My pita bread is freshly made from my favorite cafe/bakery that I will be talking all good things about in my next post, so stay tuned for that! You definitely will not want to miss that!
- Pitas need protein! You can choose to stay plant based for this Mediterranean meal or you can choose a lean protein just as I did. I sautéed ground chicken with yellow onions, orange bell peppers, lemon juice, and tons of fresh parsley. I also seasoned with good olive oil, sea salt, lemon pepper, garlic powder, onion powder, basil, and oregano. Cook everything until browned and caramelized.
This is definitely a “recipe” that simply does not have to be followed to the T at all. You can cook any kind of meat or seafood that you would like! Grilled shrimp would be wonderful stuffed inside of these pretty pitas!

- Leafy greens belong in pitas like chocolate belongs in peanut butter. It just works and it’s a phenomenal, yet a sneaky way to get your picky eaters to eat their fiber! I chose to serve a spinach and arugula mix, but you can use whatever you prefer. Red leaf lettuce and romaine are great options as well! PRO TIP: Pour olive oil and a squeeze of lemon juice on your greens. It helps them to become even more bright and inviting!

- I adore and cherish a carb on carb combination, so adding rice into the mix for a topping choice is super solid in my book. I cooked up basmati rice, but you can use jasmine, plain white, or brown. You can even venture out into the legume realm and roast some chickpeas or boil beautiful beans to pile into your pita.
- Olives are a staple for Mediterranean cuisine. You can use Kalamata’s. However, you know I always have to be different somehow so I changed it up with some Spanish olives.
- Pickled red onions. Need I say more?

- Persian cucumbers- thinly sliced.
- Roma tomatoes- thinly sliced.
Solely because you can’t have any type of Greek food without two of the world’s freshest pieces of produce to pair with it!

- Mashed avocado- You can slice it or cube it, but it is definitely easiest to do it this way when building your pita pocket.
- Feta cheese- Crumbled.
- Bread and butter pickles. This isn’t traditional, but I wanted to add another pickled item and it goes perfect with this combination of flavors!
- Spinach parmesan tzatziki. This Greek dressing goes without saying for this spread. However, I went ahead and chose a bit of a flavor switch up because that’s always fun for guests and your palette, of course.

- You can mix and match the flavors of the pitas and that’s truly what I love most about the concept of this board.


A pita is a little stuffed sandwich and a sandwich always, always needs chips. When I was in Aldi searching for the most iconic ingredients for this board, I came across rosemary and feta flavored chips and I was absolutely sold. It was not even a question. I had to put them in the cart for checkout!
