Grilled Corn and Peach Salad: A Summer Delight

This is THE Summer SALAD!

Whether your’e serving this as a side salad or a main, you’re going to absolutely fall head over heels for this grilled corn and white peach salad all summer long. Those non salad lovers in your life will be begging you to make this for every family barbecue or cookout because it’s better than good! It’s sweet, savory, salty, satiating, and the pops of corn with the creaminess of the cheese is just perfect. THAT’S what this salad is. It is perfection.

Let’s talk about how to properly put this salad together:

When piling salad ingredients on top of one another, I truly believe that it matters what goes where. It matters how the salad is built. It matters how this salad is presented. Above all it matters what ingredients you’re pairing with your leafy greens to concoct the most perfect summer salad you’ve ever created. I do have to say.. this one right here, is one of my favorites that I’ve ever piled into a big wooden bowl!

  • Lay some fresh arugula on the bottom of the bowl. If you happen to seriously despise arugula, you can use green leaf lettuce, or another super leafy green for a substitute. I do however promise you that even if you think you don’t like arugula, you’ll love it in this salad!
  • For the second step you’re going to cut your grilled corn off the cob and add that on top of the greens.
  • Next, you’re going to slice up two ripe white peaches. and lay them asethically around on top of the corn.
  • Place fresh mozzarella slices all over like little decorative gems!
  • Sprinkle the entire salad with crispy chopped bacon.
  • Garnish with pieces of freshly broken basil leaves!
  • Drizzle our homemade stone fruit vinaigrette all over the entire salad and serve!

What’s in the sweet stone fruit vinaigrette?

  • One spoonful of “butterfly” preserves that I was so lucky to come across at my local farmers market. Essentially, it’s just stone fruit jam. It has apricots, peaches, and nectarines inside which is great for me since stone fruits are definitely my go to fruits in the summer, next to melons! If you can’t find a preserve exactly like this one you can just pick an individual stone fruit spread such as just peach, or apricot or even plum. Whichever one tickles your fancy!
  • 1/2 tablespoon of dijon mustard.
  • A few splashes of red wine vinegar.
  • Sea salt, freshly cracked black pepper, onion powder, garlic powder, and torn basil leaves from my little garden center I have on my windowsill on my front porch.

Whisk this wonderful dressing delightfully together and pour it over all of the pretty produce we have this salad adorned with!

How to plate and pair this salad!

Being that the corn was grilled, I wanted to continue that flavor with the rest of the meal to feel like you’re at a backyard barbecue in the Hamptons. What’s better than marinated chicken thighs, ham steaks, and herbed potato salad accompanied by the most sensational summer salad you ever did see.. or eat! A particular plate where you’re combining glorious charred meats along with different types of salads and putting your plate together like this reminds me of a Thanksgiving meal. That meal is the epitome of Fall. Whereas, this pretty, perfect picture of art right here is the epitome of Summer. If you’re not feeling an entire meal like the one you see my family and I enjoyed so much, you can air fry some chicken wings, fingers, or nuggets to pair along side. You can even cook up a patty and cut into strips to serve right on top to turn this salad into a meal itself.
