Gingerbread Banana Bread Is Taking The Trophy As BEST BREAD This Winter Season.

The holiday season might be over, however, the season of gingerbread everything is sticking around for the entire season of winter. The season of becoming, resting, resetting, and hibernating to form into the best version of ourselves requires the best bread to comfort our souls with. For me, gingerbread is to winter as pumpkin pie is to autumn! Pumpkin is not just for Halloween or a holiday, just like gingerbread is not just for Christmas cookies and holiday treats. If you’re not a gingerbread fan, but you love banana bread, I still very much encourage you to give this a try. It’s perfectly sweet, dense, and moist all at the same time. This bread is the perfect amount of banana and gingerbread combined. It’s slightly spicy, yet rich and simply sugared due to my “extremely professional decision” by using; not just gingerbread cookies, but gingerbread cookie sandwiches! These sandwiches are filled with a thick cream cheese filling that complimented the outside spiced, sugared cookies just wonderfully. It made this bread incredibly delightful and unique, if I do say so myself!

Let me stop talking about how perfect this bread actually is and get into the details since I’m sure you Diamonds are dying to make this yourselves!

The wet ingredients come first, as we all know:

  • Start with a clean mixing bowl.
  • Mash two ripe bananas together until smooth.
  • Begin by adding one stick of melted butter and 1/3 cup of white granulated sugar into the into the bananas. You may be thinking that that isn’t much sugar at all! However, with the addition of those gingerbread sandwich cookies, it most definitely is enough!
  • Crack in two eggs.
  • Fold in 1/3 cup of whipped cream cheese to add contrast and density to this bread. This ingredient pairs perfectly with the gingerbread sandwich cookies we will toss in towards the end!
  • Pour in 1 tsp of vanilla extract!
  • Sprinkle in a tiny pinch of salt.

Whisk together all of those wet ingredients!


Now, it’s time for the second addition! The dry ingredients:

  • With an iconic, old-fashioned hand mixer, mix in two cups of flour and 1/2 teaspoon of baking powder.
  • Mix well until fully combined.
  • Fold in 4-5 crushed up gingerbread cookies into the batter.
  • Sprinkle in some cinnamon.

Pour the batter into a nonstick bread pan & set your ovens to 350 degrees.

Bake this gingerbread banana bread for one hour, or until a toothpick comes out clean after poking the bread to check for doneness

Look how beautiful this bread looks! It seriously almost looks fake! WAY too pretty to eat, which is honestly why I didn’t cut into it when photographing because I was just so in awe of how it looked as a whole, so I decided to leave it as such. Let it shine and show its beauty to all of you Diamonds! Then, when you create your own batter and bake it, you can absolutely slice into it to enjoy knowing how sensational it is going to taste!

Winter is wonderful! It is time to soak in this snow covered time in life and romanticize it with my gingerbread banana bread!
