



Oh gosh Diamonds! Caramelized onion dip is such a classic! It is so creamy, so cheesy, and so so rich in flavor from all those delicious bits of sweet caramelized onions. One of my favorite things about this dip is that you can dunk pretty much anything your heart desires into it! If you want to get a little crazy with it.. white pizza is the ultimate experience! 😉 The trick to this dip is to not cook the onions too fast! This is something that needs time to become wonderful and it simply cannot be rushed. It just can’t be. I always say there’s a difference between cooking onions fast on high heat and cooking them slow on low heat. When they’re cooked fast they are known as being sautéed, as opposed to them being caramelized on the lowest heat possible. Trust me when I say that this process is definitely worth the wait!

Heat up two tablespoons of olive oil and a pad of butter in a sauté pan over low heat.

Dice up two large red onions and toss them on top of the melted butter. Mix in garlic powder, parsley, salt & pepper and cook on low for 30-40 minutes, stirring occasionally. To amp up the natural sweetness of the onion itself you can add in two tablespoons of granulated sugar as well.

When you only have a few minutes left before these purple gems can be taken off the heat, pour in 1/3 cup of sherry wine and one tablespoon of red wine vinegar. Let that simmer and reduce for at least five minutes.


I love throwing in pops of color to my dishes and creations, so I mined up one tablespoon of pimentos. It gives the dip that extra pop of flavor and great contrast.

Once the onions have reduced the liquid that was added in shut the heat off and pour everything over a bowl filled with one cup of mayonnaise, one block of whole fat cream cheese, 1/2 cup of cheddar cheese, 1/2 cup of white cheddar cheese, and last but not least 1/2 cup of mozzarella cheese.
- Stir everything together and pile it into a serving bowl. Garnish your glorious caramelized onion dip with French fried onions, mozzarella cheese, parsley, and fresh cracked black pepper!
- I very much enjoy this dip warm so I did not let the onions cool before I mixed it with the cold ingredients, but if you’d prefer a chip dip and you want it cold, just transfer the onions onto a small plate, and set them in the fridge to come to the temperature of your liking.
