I’ll snap back to reality Diamonds.. not every night can be so flawless, but your food definitely can be. This pasta dish will transport you to a luxurious restaurant in Italy overlooking the breathtaking city of Genoa. Sometimes all we need is to feel like we’ve gone on vacation for even just a few moments to breath, rejuvenate, and in this case.. eat incredible food that you’ll want to enjoy all over again. The beauty of cooking is fact that you can make your own kitchen feel like you’ve just entered any city or country in the world based on whatever you’re choosing to cook. The aroma will make you feel like you’re partially there and then once you take that first bite you will be in full paradise mode!
This parmesan pesto pasta will truly make you want to turn your kitchen into a quick trip to Italy just like that!
Let me show you Diamonds how I made this pasta dish:

Ingredients you’ll need:
- A container of grape tomatoes, sliced in half.
- Half of a jar of your favorite pesto. You can make it homemade if you’d like as well.
- The juice of half a lemon.
- 1/2 cup of parmesan cheese.
- A pad of butter.
- Four strips of bacon.
- Pasta of your choice because what would a pasta dish be without it?!

- First step is to cook your bacon until crispy, then set aside to cool and cut!
- While your bacon is sizzling, get a pot of water boiling to cook your pasta to al dente! About 8-9 minutes.

In a large sauté pan over medium-hight heat get those grape tomatoes charred in two tablespoons of olive oil and a tablespoon of butter, so that they get a chance to get some gorgeous color on them. As the temperature of the tomatoes increase that will allow their juices to release, beginning to create a sauce.


You want the tomatoes to cook for a good five minutes until they look beautiful and blistered like this before adding in the other ingredients!

When the tomatoes have gotten to the perfect texture, add in your pesto, parmesan cheese, crispy bacon, and also a splash of sherry wine to give the sauce intense, robust flavor!
