Mini Bell Pepper Poppers Loaded with Cheese dip!

A Sensational Summer Barbecue Appetizer!

Whenever Summertime rolls around I always crave those original creamy, cheesy, and spicy jalapeno poppers. However, I do have a really unique recipe for those here on the blog from last Summer and I’ve realized that not everyone loves hot stuff as much as I do. Therefore, I wanted to have everyone included in the popper party this season, so I created these sweet and savory bell pepper poppers stuffed with the yummiest, cheesiest filling you’ll ever taste! They are absolutely scrumptious and delicious to pair with anything from the grill that you would desire to barbecue this time of year. Peppers like these are beyond perfect to prepare and pack to bring with you to a cookout, graduation party, or gender reveal! You definitely won’t regret making these considering they’re insanely easy to create and everyone including children will love them because we left out a majority of the heat by using the sweet multicolored bell peppers instead of the jalapenos.

Start by mixing the filling!

In a glass mixing bowl:

  • An 8oz softened package of cream cheese
  • 1/3 cup of mayonnaise
  • 7 dashes of Mexican hot sauce
  • A handful of thinly sliced scallions
  • 1/2 cup of mixed cheddar cheese
  • 1/3 cup of shredded mozzarella cheese
  • A tablespoon of yellow mustard
  • A drizzle of honey
  • Season with sea salt, freshly cracked black pepper, dried parsley, garlic powder, onion powder, paprika, and a pinch of chili powder to taste.

I would just like to mention also if you’re not a pepper person you can use this cheesy goodness as a dip for chips or even grilled potatoes would be phenomenal as well.

Wash an entire bag of mini bell peppers!

NEXT: Cut the peppers in half and deseed!

Bake at 375 degrees for 20 minutes!

When these pretty poppers come out all that’s left to do is drizzle them with a Chili pepper cream sauce and garnish with parsley leaves.

Cream sauce recipe:

  • 1/2 tablespoon of whole fat mayonnaise
  • 1 tablespoon of your favorite hot Mexican hot sauce.

This sauce is so darn delicious and easy to make it is unreal. It would be great on so so many other meals as well such as drizzling it over top quesadillas, burgers, wraps, or to even use as a southwest or taco salad dressing!

I ended up giving some of these away to one of my best girlfriends and she said that they were absolutely incredible! She loved them so much so I know you Diamonds will love them just as much she did when you recreate this easy peasy recipe!!!
